Stay at Home Mom's Turkey Posole




As a stay at home mom, I sometimes run into people who assume I also like to spend forever cooking dinner or lunch. Not so. I DO like to cook when I'm in the mood. But now and then I just want a nice comfort warm dish that doesn't take much time to cook. I have days where I wish someone else would do the cooking too.
I've been craving "posole." (pronounced pō sṓ lày). There are two definitions when you hear people talking about posole. Sometimes it refers to the large corn kernel itself. Mostly though it refers to the wonderful Mexican soup that contains hominy, pork, lime, cilantro and chilies. If you go the traditional route you also need to spend time soaking the corn kernels. I went the short cut route due to my schedule and wanting to eat SOON.




Working at home means I can make my food while I work, going back and forth from the kitchen. This is great for me because I can do other chores at the same time. However, if you get distracted and totally in to something you can also have some cons to the whole cooking while you work. For example, I recently forgot I had 5 eggs in a small pan boiling. I won't give all the details but I will say that when eggs boil down and there is no water left in the pan, the resulting explosion of the eggs makes a sound similar to a gunshot. (Picture my kids running for cover). Someone said I should have just fed the eggs to the dog. I replied "You don't understand. There wasn't anything to hand to the dog. We are talking smithereens here. Egg pieces from one end of the kitchen to the other…."
Moral of the story: Use a Timer. A LOUD timer if you tend to get engrossed in your daily activities because you enjoy them so much.

Ingredient List

 
1 large can of white hominy ( or 2 regular cans) – DRAIN AND RINSE in a colander
1 can of Hatch green chilis and tomatoes (if you can't find Hatch, Rotel makes a great Mexican flavored one and it's got lime in it too!)
1/2 white onion chopped
1 large clove garlic - minced
3 cups of chicken broth
1 cup ground turkey sausage
2tsp comino
1 tsp chili powder
½ teaspoon oregano (Mexican oregano is best but regular dried oregano works just fine)
Salt to taste
2 tsp olive oil
2 tsp lime juice
Suggested complements/garnish: chopped avocado, chopped cilantro, corn tortilla chips, or steamed corn tortillas




Preparation:


Crumble then brown the turkey sausage in a skillet. Then place on a napkin and blot grease from the sausage. Set aside.Chop the onion
Mince the garlic
Drain and rinse the hominy in a colander. Leave in colander til ready for use.




Saute the onion for approximately four minutes on low to medium heat until the onions are soft. (Don't add anything else til they are soft or they will take longer to cook through).
Add the minced garlic to the sauteed onion. Then saute 1-2 minutes.
Pour in the chicken broth.
Add the sausage and tomatoes/chilis.
Stir well then add the comino, chili powder, oregano, salt and lime juice. Stir again.
Simmer 15 minutes.
Enjoy with your favorite sides/garnishes.
Serves 4-6 depending on serving size.
